JingeBear's Favorite Broccoli Salad

Cute bunnies aren't the only animals that appreciate a good green salad. Everyone knows how good broccoli is for you, but many don't enjoy the taste. Here's a recipe that might make you and your kids love broccoli!

1 bunch of broccoli, cut into bite size pieces
1/2 c. raisins, soaked for 15 minutes in warm water to plump
1/2 c. craisins, soaked for 15 minutes in warm water to plump
1/2 medium red onion or 1 shallot, chopped finely
1/2 c. toasted sunflower seeds
2 Tbsp. crumbled crisp bacon or imitation bacon bits

If raw broccoli tends to fight back with you, blanche it in salted boiling water for 3-4 minutes, then shock by rinsing in cold water. Combine all ingredients by tossing gently. Top with the following dressing:

1/2 c. sugar or sugar substitute
1 c. mayonnaise (non-fat or substitute with non-fat yogurt)
2 Tbsp. aged Balsamic vinegar
Stir together until sugar is dissolved. Store in the refrigerator for about an hour before serving.
