Curried Chicken Soup

A cure for what ails you. Something to comfort your disappointment or loss. Warming up on a cool night...

Curried Chicken Soup

Ingredients

2 Tbsp extra virgin olive oil
1/2 lb carrots, chunked
3 stalks celery, sliced
2 onions, chopped
4 cloves garlic, chopped
1-2 poblano peppers, chopped
1 large red bell pepper, chopped
2 quarts chicken stock
2 quarts water
1 Tbsp salt
1 Tbsp coarse black pepper
1 Tbsp mild curry powder (Maharajah)
1 Tbsp medium curry powder (Vindaloo)
2 large cans chicken breast, or 1 rotisserie chicken deboned

Heat oil in large stock pot, add veggies. Cook until tender. Add stock, water seasonings and chicken. Cook until reduced by 1/3 (45 mins or so). Reseason with salt and pepper as desired. I add noodles, rice or even dumplings to boost the slow burning carb value.
